I took some 80/20 ground beef, made some burger patties and put some blue cheese in the middle. Then I made a bacon weave out of thick cut bacon, topped it with some seasoning and threw them on the smoker.
I used Apple Traeger pellets and set my smoker to 275 degrees and smoked the bacon a blue cheese stuffed burgers until they hit an internal temperature of 160 degrees.
If you are ever thinking about smoking any burger on a smoker, I suggest giving this bacon blue cheese burger a shot… it was delicious!
Bacon Blue Cheese Burger Ingredients
- 1 pound of 80/20 ground beef
- 12 slices of thick cut bacon
- Blue cheese (as much or as little as you like)
- 1/2 onion
- Lettuce, tomato, ketchup and mayo as condiments
- Kosher salt and pepper to taste
Prepping Instructions
- Mix your ground beef with kosher salt and pepper
- Make 8 meatballs roughly 1/8 pound in size
- Place blue cheese in the middle of one beef patty and place a second beef patty on top
- Pinch the edges of the 2 beef patties together to create a seal to hold the blue cheese in during the cook
- Build a 3×3 bacon weave for each burger
- Place rack on top of bacon weave to prevent curling during smoke
- Caramelize onion in butter and your favorite cooking oil
Smoking Instructions
- Pre heat your smoker to 275 degrees
- Place your bacon weaves and burger patties on the smoker
- Smoke your bacon until it is crisp or to you liking
- Smoke your burger patties until the reach an internal temperature of 160 degrees, remove from smoker and let rest for at least 10 minutes
