Bacon Cheeseburger Pig Shots Recipe

I took some pre cooked sausage and wrapped it with bacon and filled it with hamburger, pickle and onions and topped it with cheese.

I used signature Traeger pellets and set my smoker to 325 until I got an internal temperature of 160 degrees.

If you love bacon cheeseburgers but are on a keto diet, you are going to love this recipe.

Ingredients

  • 1 pre cooked rope sausage of your favorite flavor
  • 1 package of regular cut bacon
  • 1 pound of ground beef
  • 1/2 cup of onion
  • 20 to 30 hamburger pickle slices
  • 1 block of cheddar cheese
  • Toothpicks

Prepping Instructions

  • Cut your pre cooked rope sausage into discs that are about 1/4 of an inch thick
  • Cut your bacon in half
  • Cut your block of cheddar cheese into slices just big enough to sit on top of your pig shots
  • Wrap your sausage disc with bacon making a “cup”
  • Secure your bacon to your sausage with a toothpick
  • In a blender, blend your pickles and onions until they are in small little chunks
  • Hand mix your onion a pickle blend with your ground beef
  • Place your ground beef, onion and pickle mixture into a piping bag or into a zip lock bag and cut a corner big enough to allow the mixture to be squeezed into your pig shot
  • Fill your pig shots with your ground beef, onion and pickle mixture
  • Place your pig shots on a baking rack

Smoking Instructions

  • Pre heat your smoker to 325 degrees
  • Place your rack of pig shots on the smoker
  • Once the internal temperature of your bacon cheeseburger pig shots reach about 150 degrees, top with cheddar cheese
  • Once the internal temperature of your bacon cheeseburger pig shots reach 160 degrees, remove from smoker and let rest for at least 10 minutes
