I made a bacon weave and stuffed it with sausage, scrambled eggs, ham and cheese and threw it on the smoke to make one of the best breakfast’s meals one could wish for.

I used Apple Wood Traeger Pellets and set my smoker to 350 degrees. It took a little bit over an hour to for the breakfast bomb to reach an internal temperature of 165 degrees but it was well worth the wait!

Breakfast Bombs Ingredients

  • 13 slices of bacon (I used thick sliced bacon but regular slice bacon will work just as well)
  • 1 pound of ground sausage
  • 1/4 pound (or so) of diced ham
  • 1/2 medium onion
  • 2 garlic cloves
  • 5 eggs
  • 1/4 cup of milk
  • Kosher salt and pepper
  • Traeger Pork & Poultry Rub
  • 4 slices of Velveeta single slice cheese
  • 1/2 Roma tomatoe

Prepping Instructions

  • Sauté onion and garlic
  • Scramble eggs and milk in a bowl and add to sautéed onions and garlic
  • Cook eggs to a softened state (we still need to smoke these eggs in our breakfast bomb so you do not want to over cook)
  • Make a 7×6 bacon weave
  • Spread 1 pound of ground sausage evenly across bacon weave
  • Lightly sprinkle Traeger rub on sausage
  • Spread scrambled eggs on top of sausage and bacon weave
  • Spread diced ham on top of eggs
  • Place 2 pieces of cheese on top of ham
  • Roll bacon weave so all of your fillings are inside the bacon weave

Smoking Instructions

  • Pre heat your smoker to 350 degrees
  • Place breakfast bomb in your smoker
  • Once your breakfast bomb reaches 165 degrees internally remove from smoker
  • Top breakfast bomb with 2 slices of cheese and diced tomatoes
  • Let breakfast bomb rest for about 10 minutes
  • Slice and enjoy!
