Pineapple Pig Shots Recipe

I took some pre cooked sausage and wrapped it with bacon and filled it with cream cheese and pineapple chunks.

I used signature Traeger pellets and set my smoker to 325 until the bacon looked crispy.

Because all the ingredients, except the bacon is cooked, it’s really hard to undercook these pineapple pig shots.

Ingredients

  • 1 pre cooked rope sausage of your favorite flavor
  • 1 package of regular cut bacon
  • 8 ounces of softened cream cheese
  • 8 ounces of chunked pineapple
  • Toothpicks

Prepping Instructions

  • Cut your pre cooked rope sausage into discs that are about 1/4 of an inch thick
  • Cut your bacon in half
  • Wrap your sausage disc with bacon making a “cup”
  • Secure your bacon to your sausage with a toothpick
  • In a bowl, hand mix your cream cheese and 6 to 7 ounces of your pineapple
  • Place your cream cheese pineapple mix into a piping bag or into a zip lock bag and cut a corner big enough to allow the mixture to be squeezed into your pig shot
  • Fill your pig shots with your cream cheese pineapple mix
  • Top your pig shots with the remainder of your chunked pineapple
  • Place your pig shots on a baking rack

Smoking Instructions

  • Pre heat your smoker to 325 degrees
  • Place your rack of pig shots on the smoker
  • Once the bacon is cooked to your liking, remove the pig shots from the smoker and let rest for at least 10 minutes
