I purchased a rib roast and a sirloin roast today and as I was portioning them up I was left with the ends of each roast. I decided what better way to use these roast ends than to cut them up into bitable pieces, put them on the smoker and then finish them off on the stove top with my pepper steak recipe.
Unlike your typical pepper steak, these smoked roast ends came out juicy and tender and definitely kicked up my pepper steak a notch. Give it a try and let us know how it turned out for you.
Ingredients
- 2lbs of steak cubed
- 1/2 cup of sriracha
- Your favorite beef BBQ rub
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1/2 orange bell pepper
- 1/2 yellow onion
- 3 garlic cloves minced
- 6 green scallions
- 6 Tblsp white cooking wine
- 6 Tblsp soy sauce
- 6 tsp cornstarch
- 5 tsp brown sugar
- 1 Tblsp sesame oil
- 4 tsp rice vineager
- 2 pinches of black pepper
Smoking Instructions
- Use sriracha as a binder and coat your steak bites
- Coat your steak bites with your favorite BBQ rub
- Set smoker to 250 degrees and let steak bites smoke for 2 hours or until you have a nice bark then remove from smoker
Pepper Steak Sauce Instructions
- In a bowl combine soy sauce, white cooking wine, sesame oil, rice vinegar and oyster sauce and give a nice mix
- Add corn starch, brown sugar and black pepper and give a nice whisk until all clumps are gone.
Stove Top Instructions
- Add oil into your pan then cook scallions and garlic for about 1 minute or until fragrant
- Add peppers and onion into your pan and cook for about 3 minutes
- Add smoked steak and sauce into your pan and let it simmer for about 4 or 5 minutes
Serving Instructions
- Serve on top of white rice and enjoy
