Smoking St Louis style ribs using this recipe for your next backyard BBQ is a sure way to impress all your family and friends with your cooking abilities.  I personally like St Louis style ribs over baby backs and spare ribs because St Louis style ribs have more meat than baby backs and don’t have all that cartilage like spare ribs.

Simply start by seasoning your ribs with kosher salt, black pepper and your favorite BBQ rub then throw them on the smoker at 225 degrees until they hit an internal temperature of 145 degrees.  Then wrap them in aluminum foil filled with brown sugar, an apple cider vinegar and BBQ sauce mixture, a stick of butter and some honey.  When your St Louis style ribs hit 203 degrees internally finish them off with a glaze and prepare to have your taste buds blown away!

St Louis Style Ribs Ingredients

  • 1 rack of St Louis Style Ribs
  • Kosher salt and black pepper to taste
  • Jack Daniels pork BBQ rub
  • 8 Tbsps. of brown sugar
  • 1/2 cup of apple cider vinegar
  • 1/2 cup of BBQ sauce
  • 1 stick of butter
  • 2 Tbsps. of honey
  • 3 Tbsps. of apple habanero glaze (you can substitute BBQ sauce)

Smoking Instructions

  • Pre heat your smoker to 225 degrees
  • Place ribs bone side down on smoker until you reach an internal temperature of 145 degrees
  • Remove ribs from smoker and prepare wrap
  • In aluminum foil, spread 4 Tbsps. of brown sugar
  • Mix apple cider vinegar and BBQ sauce then place on top of brown sugar
  • Drizzle honey over top of brown sugar and apple cider vinegar and BBQ sauce mixture
  • Top it off with 1/2 stick of butter
  • Place St Louis style ribs meat side down on top of brown sugar, apple cider vinegar and BBQ mix, honey and butter
  • Repeat brown sugar, apple cider vinegar and BBQ mix, honey and butter steps above on top of the rack of St Louis style ribs
  • Wrap up your St Louis style ribs in the tin foil
  • Increase temperature of smoker to 250 degrees and return your wrapped ribs to smoker until they reach an internal temperature of 203 degrees
  • Remove St Louis style ribs from wrap and place on a dry tray and top with your glaze
  • Return St Louis style ribs to smoker for 10 minutes then remove
