Stuffed chicken marsala was always my go to order at Olive Garden. However, I don’t live near an Olive Garden anymore and from my understanding Olive Garden doesn’t have the stuffed chicken marsala on the menu anyways. So I figured, why not try to recreate the chicken marsala and throw it on the smoker. I’m glad I did because this stuffed chicken marsala recipe is delicious.
I started by butterflying a boneless, skinless chicken breast and then tenderized it with a meat mallet. From there I stuffed it with cheese, bread crumbs, garlic, red pepper flakes, sun dried tomatoes, green onion and sour cream and gave it a mix. After I stuffed the chicken breast with my mix, I wrapped it in bacon and threw some apple honey rub on it and onto the smoker it went.
As it was smoking, I made my marsala sauce on the stovetop along with some mashed potatoes to go along with my meal. If you loved Olive Garden’s stuffed chicken marsala as much as I did, you will want to give this recipe a try.
Stuffed Chicken Marsala Ingredients
- 4 boneless skinless chicken breasts
- 1/2 cup mozzarella cheese
- 1/4 cup parmesan cheese
- 1/2 cup of bread crumbs
- 3 minced garlic cloves
- 1 tspn of crushed red pepper (optional, add more or less depending on your spice level)
- 4 oz of sun dried tomatoes
- 4 diced green onions
- 1/2 cup sour cream
- 12 slices of regular cut bacon
- 2 pinches of black pepper
- Your favorite chicken or pork rub
- 6 sliced mushroom’s
- 1/2 sliced yellow sweet onion
- 2 Tblsp flour
- 1/2 cup marsala wine
- 1/2 cup heavy whipping cream
- Parsley for granishing
Stuffing Instructions
- In a mixing bowl add your mozzarella cheese, parmesan cheese, bread crumbs, 1/2 of your minced garlic, red pepper flakes, sun dried tomatoes, green onion, sour cream a black pepper and give them a good mix with your hands.
Chicken Prep Instructions
- Cut your boneless skinless chicken breast down the middle about 3/4’s of the way
- Open up your chicken breast, cover with saran wrap or put in a zip lock bag and beat the a meat mallet until chicken breast is even and about 1/4 of an inch thick
- Place 1/4 of stuffing on one half of the chicken breast then fold the other half over the top
- Wrap each chicken breast with 3 slices of bacon and season with your favorite rub
Smoking Instructions
- We recommend using an apple pellet for this smoke as apple pellets go really well with chicken and bacon
- Preheat your smoker to 250 degrees
- Once the internet temperature of your chicken reaches 165 degrees, remove from smoker
Marsala Prep Instructions
- Oil your pan and turn the heat to a medium high
- Add mushrooms and let them cook for about 5 minutes
- Add garlic and onions and cook for about 3 minutes
- Add 2 tablespoons of flour and stir until the flour is well incorporated
- Add marsala wine and let that incorporate for 2 or 3 minutes
- Add heavy whipping cream and reduce by
Plating Instructions
- I used mashed potatoes as a base for my plate
- Place the smoked chicken on top of your mashed potatoes
- Ladle marsala sauce of the top of your chicken and mashed potatoes
- Garnish with some parsley
