In this brisket point recipe I am going to show you how I make burnt ends with a bit of a sweet taste and a spicy kick. The brisket point is the best cut to make burnt ends because it gives you the most tender bite from the entire brisket.
In this brisket point recipe I simply seasoned and smoked my brisket point just like I would with any brisket, kosher salt, black pepper and your favorite beef rub. Smoke the brisket point until you reach 165 internally then give it a wrap in butcher paper and put it back on the smoker until its probe tender. As I let the brisket point rest, for a minimum of 1 hour, I made a sweet and spicy glaze and put it in the fridge.
Once your brisket point has had time to rest, it’s time to make the burnt ends. Simply slice your brisket point up into about 1 inch by inch bites then add your glaze and get a nice coating on your burnt ends. Throw your burnt ends back on the smoke for 15 minutes to allow your glaze to stick to your burnt ends and then all you have to do is eat!
Brisket Point Ingredients
- 1 brisket point
- Sriracha – use as a binder and add a thin coat
- Kosher Salt
- Black Pepper
- Your favorite beef rub
Brisket Point Prep Instructions
- Lightly coat brisket point using Sriracha as a binder
- Sprinkle kosher salt on brisket point
- Sprinkle black pepper on brisket point
- Give a healthy coat of your favorite beef rub on you brisket point
Brisket Point Cooking Instructions
- Preheat smoker to 300 degrees
- Place brisket point on smoker until it reaches 165 degrees internal
- At 165 degrees, wrap brisket point in butcher paper and place back on the smoker
- At 205 degrees internal, remove brisket point from smoker and place it in a cooler to let rest for a minimum of 1 hour
Burnt Ends Instructions
- Pre heat smoker to 300 degrees
- Cut your brisket point into 1 inch by 1 inch squares to make burnt ends
- Place burnt ends into a bowl and mix your your glaze (Here is our sweet and spicy glaze recipe)
- Place burnt ends on smoker and let smoke for about 15 minutes
- Remove burnt ends from smoker and enjoy
